Quick and Easy Apple Hand Pies with Salted Caramel

Is there anything better in the autumn than an apple pie? No? How about a portable pocket of pie goodness with a creamy-sweet-and-slightly-salty surprise?

I came up with this idea because I was looking for an easy-to-make fall dessert that incorporated the flavor of salted caramel, but I didn’t want to have to make a sauce. This recipe is so easy: there are only a handful of ingredients, most of which you probably already have; the hand pies take just a few minutes to assemble, and they are seriously delicious.

You’ll need:

  • 2 cups of apples, peeled, cored and diced
  • 2 9-inch pie crusts. I used the refrigerated, pre-made kind, but if you want to make your own, knock yourself out!
  • 1/3 cup of sugar
  • 1 tablespoon of flour
  • 1 tsp cinammon
  • 1 tsp vanilla extract
  • Marzetti® Sweet & Salty Caramel Dip (If you don’t love the flavor of salted caramel, these are just as yummy with Marzetti Old Fashioned Caramel Dip.)

Marzetti Sweet & Salty Caramel Dip

To make the pies:

  • Preheat oven to 400° F
  • Mix together the apples, sugar, flour, cinnamon, and vanilla extract.
  • Lay the pie crust on a floured surface. I rolled mine out a bit just to give me more working space.
  • Cut the pie crusts in quarters to create eight triangles

  • Place 1/8 (about 1/3 cup) of the apple mixture in each triangle
  • Now take a few spoonfuls of the caramel dip and put in a small microwave-safe container. Microwave for 20 seconds, stir, and give it another 10 seconds if needed – but be careful because it burns quickly! There’s no need for it to be totally melted or runny; you just want it to be soft and easy to work with. 
  • Put a dollop of the softened caramel on the top of the apple mixture in each crust triangle.
  • Now fold the crust over to create a turnover-shaped pie, and crimp the edges with a fork.

  • This step is optional, but I like to brush a little beaten egg mixed with a few tablespoons of water on top of the hand pies before baking. It gives the crust a nice golden shine.
  • Finally, cut a few slits in the top of each hand pie. Not only will this let steam escape as the pie bakes, but as the caramel dip melts, a little of it will run out of the slits and the sweet-salty goodness will run over the crust. Yummm…
  • Bake in the preheated oven for 15-20 minutes, until the pies are golden brown.

These lasted about forty-five seconds in my house, but if you have time you can serve with a scoop of ice cream or a sprinkle of powdered sugar…or melt a little more Marzetti caramel dip for 30 -45 seconds (stirring midway through) in a microwave-safe container and drizzle it over the top.

They’re great straight out of the oven, though.
